To French people, Brittany is "the end of the world". Finistère, one of the 4 departments of Brittany, literally comes from the sentence "fin de la terre" or "end of the earth". But to us at Le Bocal, Brittany is center of the world, it's home. Brittany's long empty beaches are weekends, and the waves crashing on the wonderful pink stone of Côtes d'Armor are childhood afternoons, laughing as we try to escape the splatter. Of course, the sweet smell of crêpe dough and sea salt butter, cooking on the traditional Billig, is comfort.
Getting our recipe for our crêpes took time, and many tries, to get them just right. We have opted for an artisanal version, which includes both organic wheat flour and organic spelt flour.
It is recommended to add rum for a lovely touch of extra flavor, or orange blossom, for a Spring version!
Add: butter, eggs and milk (optional: rum or orange blossom)
You will need: a bowl, a flat-ish pan, a spatula
